We keep ramen as well. Haven't used a flavor packet in years. Usually I make a sauce in a skillet while the water boils. Either use some of the better than boullion as a base or the spicy garlic asian sauce we always seem to have or some peanut sauce and add in my meat and veggies. Boil the noodles until they just start to soften up and then add them to the skillet and let them finish in the sauce.

A favorite around here is a little peanut sauce, edamame, onions, celery seed, cracked pepper and garlic. I actually have put together packets of this in the buckets I store many of our bulk type preps in.

Glad to see that people aren't locked in on the packets, I see the usefullness of the noodles though if you like the carbs.
As I have indicated in other posts, I would prefer to get my calories from good fats rather than carbs.
I am not as worried about sodium as I am about that MSG.
There is a pack of lies masquerading as truth with respect to nutrition, and villifying salt and animal fats are at the top of the list.
Sugar should be high on the list, along with the vegetable oils apart from Olive oil and Coconut oil, but it seems to be considered an essential food instead.

I think they're a good idea. Cheap and filling. We have them for charity as well.

I used them as a young grunt. Some MRE Cheese and crackers mixed in and it would stick without being heavy. And this was the MREs used (used, not made) back in the mid-90s.
