We take the backstrap and let it soak in Apple Juice with a tad of Apple Cider Vinegar for 2 days. Then I put it in the crock pot with some apple cider vinegar, bbq sauce, lil bit of beer, peppers, and spices. Let it cook for about 6 hours and you will have some of the best deer BBQ on Earf
You know what ol' Jack Burton always says at a time like this?

Too many times I see folks panic over bloodshot meat. There is a time and place where you need to let it go as it got damaged BUT look real hard at it. Take pic #1

The meat looks damaged but in reality the blood has simply soaked in underneath the membrane (silverskin) and the second picture was taken 2 minutes later after a small amount of scraping, pulling and cutting.

The meat underneath was untouched and clean all the way thru.

This is gonna make me a good pot of antelope stew!

Looks like a perfectly good piece of meat to me. I'd cook it up.

            Tools of the trade

There are times it takes little more than a knife but there are times more is needed.
I can process most everything without the bone saws but if you want certain cuts then it is good to have.

A tool that is awesome is the "buttout" which helps remove well the butt, not the whole butt but the ********.
They run less than $10 and when I first saw them i thought it was just another gimick but that isnt so at all. This can be accomplished with a blade but this is really easy and foolproof and you know you got it all.

A good knife is crucial and a sharpener or steel is also needed to maintain the edge as you go because hair can turn down the edge quickly. Both of these kits have steels in them. Buy the best quality steel you can, you wont regret it.

This is an older military kit that may still be in use, not sure. It has alot of other utensils that are good to have around too.

This kit is a cheapie from Academy that has seen alot of use and is ok but not great.

The gut hook allows you to remove the innards without accidentally cutting into them and can be had for around $6 upward
