Great stuff as usual. Hopefully "Team Hit n Miss" got to enjoy some of that!
Oh and how do you prepare your backstrap? I've mainly had it in sausage form

De-licious! I've always wondered how you hunt in wide open spaces like Oklahoma? I think backstrap is good prepared just like a steak. If it's too gamey just add a couple of onions or whatever. But we usually eat it like steaks.

The open side of the state didnt come about to me till my early 20s. I had to get a real rifle then! We find high ground and watch, we also work out canyon and deep cover spots during the day to bust them out.

I like to marinate and grill the backstrap, I'm making summer sausage today

If it's gamey keep soaking the blood out of the meat

the meat should almost be white when you are done!

I like making stir fry out of the back strap. The front shoulders (with bone) make a great meal in the slow cooker with beans n rice.

I love the fat video. This is why I keep coming back here as often as I can. I learn something new every time. Thanks for sharing.

By the way, Did the Sausage turn out good last night?

Also what type of casing do most of you use? I know in a SHTF world we will all be using natural casings, but I have a hard time getting by the thought of those things. lol

I use LEM products for most of my stuff. Academy, Tractor Supply and Bass Pro have them onhand and they can be ordered from the company as well. I aint doing nor eating "natural" casings, we will just have patties:)
LEM Products offers high-quality meat processing equipment, jerky and sausage making supplies, and food preparation tools. We focus on making deer and game processing easy.

I vote for backstrap cooked like steak on the grill.
Survival question. What do I need most, right now?
