I don't know which type of bean to get to compliment my rice LTS? Don't know which one has the best Amino Acid profile to compliment the amino acid profile of rice to get the protein from.

Which Beans to get?

I just lump all the beans into the "protein" category, and don't worry about the rest. For taste purposes, I like to grab a selection. Pintos, Navy, Butter, Split Pea (okay, it's not a bean, but it's a LOT of fiber) and whatever else I can find that will offer a change every now and then. Appetite fatigue is a real concern here. When you're looking at a cabinet full of stuff and NONE of it looks appealing, you need to branch out a bit.

In college I was required to take a nutrition class. The thought of it made me groan. However, after the class began I discovered I like it and learned a great deal. Legumes and grains will make the 'perfect protein'. That how a lot of vegetarians remain perfectly healthy. If you look at cultures throughout the world you will see this combination. Black beans and rice. Lima beans and corn, etc. Each alone has a missing element needed to make it a protein the body can use for a building block. But together - they are magic!
Just combine the two together and you should meet your protein requirements.

I think I will get some black beans and pinto beans and probably those red beans (chili beans).
