  • More rabbit than freezer

    Have had a great year so far with our rabbits. Last year was horrible, seemed like almost a complete waste. We culled a bunch of breeders and got a new male.

    This year has been gang busters. Changing things up definitely helped.

    All the mommas have had kits and we've put up a bunch of rabbit so far this year. I almost forgot how tasty rabbit was.

    The freezer is still pretty full from deer from around Christmas. Then we butchered the remaining meat birds we did this year and that left us with little space for rabbits.

    My wife guestimated it perfectly we should guessed we could fit about 10 in there yesterday. 10 it was, just room at the top of the chest freezer for some ice cube trays.

    There is about 10 more that will have to go in the next few weeks also, so rabbit palooza here we come!
    Boris- "He's famous, has picture on three dollar bill!"

    Rocky- "Wow! I've never even seen a three dollar bill!"

    Boris- "Is it my fault you're poor?"

    Anyway Cletus as I was sayin'...you got your rabbit stew,fried rabbit,bbq rabbit,rabbit pie,rabbit loaf,braised rabbit,rabbit sausage,rabbit and dumplings,stir tried rabbit,rabbit gumbo,rabbit and grits,rabbit salad ...............(4 hours later)...and rabbit gravy.....
    That.that's about it.

      Man cannot live by rabbit alone. Is that a verse somewhere. But rabbit simmered with gravy and some mashed taters!!!.

        Several more ready already but no space in freezer. So we will let these guys grow more. This is an older pic as well.

        What's interesting to me is the amount of FAT you see on domestic rabbits. Too often we hear people say "their isn't enough fat on rabbit and you'll die if that's all you have for meat." Well that's utter BS with domestic rabbits as even the little ones typically have some fat on them. For a few years there when money was tight, about 90% of all the meat we ate was home raised rabbit and that wasn't an issue.

        Another internet myth debunked!!!

          speaking of rabbits.
          we've lived here about 5 years, and have always seen a few rabbits.
          but this year there are a bunch of them.

            I Think your right about rabbits. Even the wild ones that eat around the barn and chicken pen were as fat as the ones I raised. So perhaps I should go on a grass diet , I need to lose a few pounds. Also lots of rabbits in n Michigan this year.

              If you have a space problem, you might try making Rabbit Jerky. It reduces a rabbit caucus to a very compact volume of tasty jerky. Here is a Rabbit Jerky Recipe but really any venison jerky recipe should work.
              1 pound rabbit meat
              1/4 cup Soy sauce
              1/4 cup Worcestershire Sauce
              1/2 teaspoon Garlic powder
              1/2 teaspoon Onion powder
              1/4 teaspoon Black Pepper
              1/2 teaspoon Seasoning Salt
              • Cut the meat from the bone and into thin strips then combine all of ingredients except meat in a zip-lock freezer bag, seal and shake lightly to combine.
              • Now place meat in bag and re-seal it.
              • Toss gently to coat all of meat and place in refrigerate overnight.
              • Place marinated meat into a 165 to 180o F dehydrator in a single layer on a rack for 12 to 24 hrs.
              • Remove from dehydrator and let cool before storing in a covered container or zip-lock bag.

                Grind up rabbit with some sweet peppers and pickles, pressure can it. Makes a great meat spread for a quick sandwich (or three!)
