put the wheat or whatever in the mylar that is inside the bucket, toss in the o2s, squeeze all the air that you can out of the mylar and seal it, put the cover on the pail and it's done, if the pail gets sucked in a little at the sides or the top, it just means that your mylar bag has a little leak in it and the pail has a good seal.

If you put just oxygen absorbers in your bucket with no mylar bag than more than likely you are just wasting the absorber. Plastic buckets are NOT air tight. This means that more oxygen will just keep coming into the bucket. You put 1500 cc's into a 5 gallon mylar (2000 cc's is better) and then seal the MYLAR bag and then close the bucket immediately with the mylar bag inside. There are some foods you also do not put oxygen absorbers in at all. Sugar is a big culprit. If you put an O2 absorber in with it, it'll turn into a huge brick because of a chemical reaction between the sugar and the iron in the absorber. Vacuum seal bags are also not air tight, so bear that in mind while you put up your food too. :)

check out Jackie Clay at Backwoods Home magazine for recipes for goat cheese. :) She has a really great new canning book out too.
