How long will the canned meat last. Will it still be good in say 5 years or so?

I dont think so my Grandma always said no more then 2yrs. I've never pushed it. You gotta be real careful with meats even more so than veggies, done improperly its a deathtrap

I can beef stew - The way I do it is to do one batch of just potatoes and one batch with carrots and beef. Then when it is time to eat I mix one jar of potatoes with one jar of meat and carrots

Seems to work well and the potatoes are REALLY cheap to do so I've made extra batches of potatoes as food prep

O - and I use bullion cubes in all my batches for flavor

I've just started using a pressure caner. I've put up a few quarts of potatoes, and they come in very handy for soups and stews. The first batch of potatoes was from my garden, but the next batch will have to come from the store. I'll try and but them on sale to save money.

I'm using 5-year-old chicken and it's just fine and dandy. As long as it's processed properly AND stored properly it will last a good many years. Had an older neighbor in SD who was eating 11-year-old home canned beef that was also fine and dandy. He kept the cases stored under his bed.

We're working on 2 year old chicken legs that were stored in a closed-door pantry on the west wall of an un-airconditioned house since canned. Tastes fine. Raw packed quart jars, skin & bones still on, no liquid added. Taste is wonderful!
