I've never seen dried tortellini, so I'm not sure if I would take the risk to store the cheese. The only tortellini I've ever seen is in the frozen or refrigerated sections of the grocery store. Are you planning on dehydrating them? Have you seen someone do this? I'd be interested to hear.
TPM, you can buy the dried tortellini in a variety of styles - Bertoli brand I think. I have many packs stashed away and use them periodically. They seem to be fine so far after 3-4 years of storage in a glass jar on the pantry shelf.
