We have a vacuum sealer, and I do can meat as well. I won't eat any meat that is freezer burned the taste of the meat tastes like "freezer" really nasty stuff.

I just purchased a half a black angus 300+ pounds of beef! I will be smoking, canning and dehydrating
most of the fall... can't beat it at 2.50 a pound all grass fed beef. I also make my own dog food which
saves a ton of money and is much healthier for my Rottweilers...and us.

i have to restrain my prep partner regularly from throwing out "old" meat because it hsa been frozen a long time. i eat lots of things past their expiration date - the so-called 'best by' date, that is. the food does not 'expire' so much as the flavor may fade a LITTLE but mostly the processors want you to buy more regularly. Very little of it, IF PROPERLY STORED, and unopened will harm you. As for faded taste, just add more herbs & spices, and if all else fails, go to that great Wisconsin standby and melt cheese all over it.

We pulled lot of "old" (5 years or so average) beef, rabbit and chicken out. None of it was "bad", there was some freezer burn but who cares?

I recently found an old steak in the back of the freezer that had freezer burn. I thawed it out, grilled it for a bit, cut in strips and put them in the dehydrator over night. Made great jerky treats for the dogs. It was cheaper than buying dog treats and I know they weren't made in China so they won't get sick from them.

We freeze and can our meat. When it goes "bad" in the freezer, it gets smoked or dehydrated and resealed and stored w/ dry goods.
I have beef that is a few years old that is still edible. We usually go through all of the venison I put away so we rarely get to smoke or dehydrate that.
