Another point to consider will be the availability of meat when your family hits really hard times, like unemployment or illness or gas reaching $5+ a gallon. How many of us know people who don't consider a meal complete without a slab of meat on their plate?I live in the 'burbs so I have no access to fresh meat unless I visit the butcher or a local megamart. I do can meat but after a while, that will get used up.
I think for some people, maybe myself included, they are mentally used to eating meat at many of their meals and after so many nights of having vegetables for dinner, one may get tired of eating "the same old thing."
Obviously some people benefit from a meatless diet (as seen above) but I also think we should consider the mental/emotional aspects of having to change our diets. Hopefully by starting to practice a more "green" diet now will lessen the stress if the time comes that we have to eat that way all the time.
I hope we can all eat whatever we want for dinner for the rest of our lives but I'm not sure how well that's going to work out.
