  • Putting up pecans question

    Pecans are selling for $3+/lb in north Georgia and I just traded for 50 lbs of shelled pecans but am at a lost on how to store them (other than freezing).

    Anyone have any advice on putting "shelled" pecans or how long you might expect them to last?

    thought nuts had oils that would go rancid for LTS

      they do,,, So I am pretty sure the max would be a year or two, obviously longer if you keep them refrigerated, not sure if freezing would help or hurt?

          • 1Pick a spot to store pecans that you haven't hulled that's cool and free of moisture, since the dampness could shorten the nuts' longevity. If you store pecans in a dry place, they'll remain usable for about twelve months.

          • 2Store pecans that are no longer in the shell in the refrigerator until you're ready to roast, eat or use them in recipes like salads or desserts. If you store pecans in containers with secure and tight-fitting lids (like glass jars), they'll remain fresh for about nine months.

          • 3Freeze shelled pecans by first wrapping them in plastic freezer bags that you've sealed to keep out the moisture. This will keep the nuts recipe ready for two years. If you store pecans in a resealable bag, you can simply remove the amount of pecans you need to use and then close the ziplock bag up again to refreeze.

          • 4Try to eat the pecans that you've removed from the refrigerated storage within a few weeks to ensure they don't lose their texture and crunch.

          When I was a kid, my Father taught us to forage the forest to look for food ( looking for pecans, mayhaw berries, blackberries,etc.) When he was a boy, he was homeless and lived in the woods. When the pecans fell, we would go out and collect as many as we could get. We kept them in the fridge, freezer and canned 'em in mason jars.I recall that we used to dry them out a bit in the oven first, then pack them in jars - I think we pressure canned them, but I'd have to ask my mom.
