  • Spices added to meat before canning

    Going to do some canning of chicken and pork. I have watched a lot of videos on youtube and at posts here. I know salt can be added, but I was wondering if I could add some liquid smoke or even BBQ sauce to the can before I do the actual canning.

    What do you guys add to your canned meats before canning?

    One more question, anyone using the Wal-Mart brand canning jars (not the Ball brand)?

    We normally just make a chicken broth to can the meat in. We normally only can whole chicken because it's cheaper and can be used for broth. It's a little more work using the whole chicken, but then you can use it for most any chicken recipe.

      I have not used the Walmart brand of canning jars because my friends told me their experiences with them. They don't seal as well as other brands and sometimes break during the canning process.
      I watch the prices and buy jars when they are on sale, usually at the end of the canning season.
      I have canned beef stew before, but the veggies were kinda mushy so I will probably only can meat seasoned with salt in the future. I only use recipes in the Ball Blue Book, or USDA recipes. Be very careful to follow the recipe directions exactly.

        Been canning meats for 20+ years and I raw pack and add absolutely NOTHING, not even broth or water. The meat makes it's own juice and you can add the spicing when you open the jar for usage and it makes the meat taste fresh, not canned at all. Sometimes adding salt toughens the meat - you do not add salt when baking or frying meats for that reason, and other spices have a tendancy to get really strong and sometimes bitter in the canning process. To each their own , but hope you are not disappointed with your results if you do add stuff.

          I watch Craigslit for canning jars,last year i bought 25 dz mix qts and pints for 2.00 per dz..also yard sales/garage sales are places ive been lucky too..ive got over 40 dz now and still looking for more. Ive stocked up on lids too..over 100 dz of wide and reg both..canning jars and lids are like ammo to me..its a thing u cant have too much of..so buy now while its still available and fairly cheap

                bixa one can "can" any type of meat - fowl, pork, beef, venison, even bacon. My older neighbor in SD used to can extensively when on the farm and was eating beef he and his mom canned at leat 10 years before they were eating it. Proper storage goes a loooong way to keeping all canned stuff in good, safe eating condition.
