I checked the freeze dried fruits and chicken I have on hand. The fruits specify the serving size dry, i.e. 1/2cup dry servings per container:5 for the freeze dried whole blackberries. The freeze dried pineapple chunks contain 8 servings of 1/2 cup each. My freeze dried fruits are #2 1/2 size cans. There would be more servings in a #10 can. The #10 can of freeze dried chicken says serving size 100g, servings per container 6.81. 1lb freeze dried chicken equals 3.5lbs frozen cooked chicken. It was 3.5lbs of chicken originally and is now 1lb after freeze drying because of all the moisture coming out. To answer your question, the 10 cups would be after dehydration. 10 cups per #10 sounds about right. It does depend on the product though. Each individual fruit or vegetable has a different bulk and weight so it may differ somewhat from one to the other. For example the difference in serving sizes I mentioned above with the blackberries and pineapple. They each have different shapes, weights, etc... I hope that helps. Did you get the visitor message I posted on your profile about the corn flour? I accidentally deleted your email so I posted it there. I didnt want you to think I was being rude. :)
