What is your opinion of the best” way to store meat? Over the years, we have all heard, “if things get bad, I’ll just shoot a deer and feed my family.” In my area, deer are abundant, but not as abundant as people. As deer season approaches, I am considering harvesting a couple myself, but keeping in mind long-term storage, freezing would not be the best idea IMHO (power disruptions). That leaves canning. Has anyone had successes in canning meat? How long does canned meat last? Also, is there another long-term consideration? Is there a good source for learning this information; book, website, etc. Thanks for your input.

You can get several answers on the web including up to 10 years. I usually use the meat within 3 years. I don't consider home canned goods LTS...but an alternative to store-bought.
