I am planing on picking up some Rex rabbits in October to raise for food and maybe even sell. I am working on building the shelter now with wood I already have and I know how to raise them. My question is should I go with 1 buck and 2 does or should I just do 2 & 2

In general you don't need a 2nd buck. You'll keep your does breed most of the time so even if the buck dies, you can pull a suitable male from one of the litters and use that as a replacement. It's not the problem people act like it is. I've had to do that a time or two over the years and never had a rabbit born with six legs or anything :)
Bigger problem IMO is does getting too fat- it gets harder for them to conceive then.
Plan on rotating out your breeders every few years and don't overfeed any of them.Boris- "He's famous, has picture on three dollar bill!"
Rocky- "Wow! I've never even seen a three dollar bill!"
Boris- "Is it my fault you're poor?"
