  • squash and zucchini canning?

    our summer squash and zucchini are coming in.
    we have frozen squash before....
    freezer is full
    we need another...
    but for now....

    how do you prepare squash and zucchini to can in jars?
    thanks.
    growing up i didn't like to eat squash...
    now, hey, it's been easy to grow... tasting better all the time!!

    we haven't tried yet. we've been eating it daily instead lol.
    only issue i'd see is it getting mushy..

      I don't like it canned because it really does get mushy. I dehydrate it instead and use it in soups. I have also powdered it after dehydrating it. You can use the powder to thicken soups or sneak it into other dishes to get your family to eat it :-)

          Dehydrate it then run it thru the blender on high speed. You can blender it until its powder or however "thick" you prefer. I do this with both yellow squash and zucchini. For some reason, my yellow squash tastes slightly buttery when I powder it. Good stuff!

          You can probably do this with a lot of you extra vegetables. Tomatoes would probably be awesome!

            She is right, it does get mushy when you can it. I have been known to make pickles out of it, or fake pinapple to can, but not as a vegetable.

              Soak those squash slices in teriyaki or soy sauce for a bit before dehydrating - EXCELLENT crispy snacks - like tater chips but with flavor and nutrition.

                        first dehydrated batches came off tonight...
                        i think i'm going to patent this idea and sell it to fancy restaurants..
                        nope... karen and goat lady!

                        we used 2 different brand dehydrators... the one with a fan, caused the "chips" to be a little too dry... taste great, but about 1/3 of each chip is stuck to the tray.

                        the other dehydrator only has a heating unit... those chips taste good and not sticking..
                        we need to compromise... less time in the fan unit... a little more in the "no fan"
                        but awesome flavors.
