folks here seem to forget about salting their meat. Grandpa used to talk to us about their "salt" box they kept on the back porch. They would pack freshly butchered pork or beef into a wooden crate with 1/8" spacing between the slats.. and layer the meat with salt. the drippings would come out the bottom, the tops would go to the smoke house, and you rinsed the meat before you did the final cooking, seasoning and eating.
I am looking at a meat cure I got from Bass Pro shops.. for 3$ it cures 100lbs of meat..................................

Fat is a precious commodity in a survival situation. Not only just for food but you can do many useful things with tallow. My major concern is a long term (months) power failure. If it can't be preserved or stored at room temp w/o spoiling then it's a luxury item in my opinion. Goats provide a nice fatty milk. A few wet milk goats will provide fat rich milk, cream, butter and cheese. As well as meat when they are to old to be productive from a milk standpoint. Goats are small enough to be consumed readily w/o needing to store huge amounts of meat once butchered. Chickens produce eggs and meat basically on demand w/o refrigeration. Rabbits provide a lean source of protein which can be consumed completely in one meal negating the need to refrigerate. The upside to all of these animals is that you can keep many more on the same sized plot than you can a beef.
