  • Used some of my food preps yesterday

Decided that I should use a small bit that I put back for a test of an old recipe that I whipped up back in the 80's. Didn't have anything to go by back then for amounts to be used ( just sort of off the cuff ), but it turned out great then, and it still tastes as great now.
I went to the grocery Friday for some things that we needed, but didn't get anything to fix for supper on Saturday so.......PREPS TO THE RESCUE ! ! !

It is oh so simple and the family will love it.

It is Polska Kielbasa in elbow macaronni with spaghetti sauce.

Take a skillet, and add a few (3-4 ) tablespoons of oil. Chop and add a small onion to the skillet on medium-high heat till onions camelize ( light brown).
When you start the skillet and oil heating, start to boil water in a sauce pan for the macaroni, and use 2 cups of macaroni for this dish, cooking it according to the directions on the box.

When the onions have carmelized, add a package (1 lb.) of Kielbasa, cut into 1/2" slices, and cook them on the same medium-high heat till the sausage is browned. Keep stirring often so that the onions do not overly brown. When it has reached this point, add your favorite spaghetti sauce, and reduce the heat and simmer on low till the macaroni has finished cooking.

When the macaroni has finished, drain the remaining water, and add to the sausage and sauce, and continue cooking for about a minute or so more, then serve and enjoy. An extra added treat to go as a great side would be some Texas toast, Garlic Bread, Bread Sticks, or just plain buttered bread. Either way, you can't go wrong.

We are a family of three, and we still had left-overs for supper this evening. Mmmmm Mmmmm :D
