I picked the rest of the eggplant today, so I need to get it prepped. I see the plant is flowering again👍 so I should get a second harvest. I just need to bite the bullet and make more eggplant parmigiana and lasagna to put in the freezer. Maybe tomorrow. I tried dehydrating it a couple years ago but it wasn't horribly successful. Any other ideas?
